Free-from Chai crepes with natural yoghurt and pomegranate

Ingredients:

120g plain flour
2 heaped tbsp Free From Drink Me Chai Latte Powder
2 free range eggs
240ml milk
4 tbsp natural yoghurt
The seeds from 1/2 a pomegranate
Coconut butter or oil for frying

 

Method:

  1. In a mixing bowl, mix together the flour, Free From Drink Me Chai Powder and eggs. Slowly pour in the milk and using a whisk, whisk into a light and lump-free batter.
  2. Use a little coconut butter in a frying pan on a medium heat and pour in a ladle of batter, cooking for a minute or two on each side until golden brown.
  3. Repeat until all the batter has been used.
  4. Serve the crepes stuffed with yoghurt and pomegranate seeds and folded into quarters.
