Free-from Chai crepes with natural yoghurt and pomegranate
Ingredients:
120g plain flour
2 heaped tbsp Free From Drink Me Chai Latte Powder
2 free range eggs
240ml milk
4 tbsp natural yoghurt
The seeds from 1/2 a pomegranate
Coconut butter or oil for frying
Method:
- In a mixing bowl, mix together the flour, Free From Drink Me Chai Powder and eggs. Slowly pour in the milk and using a whisk, whisk into a light and lump-free batter.
- Use a little coconut butter in a frying pan on a medium heat and pour in a ladle of batter, cooking for a minute or two on each side until golden brown.
- Repeat until all the batter has been used.
- Serve the crepes stuffed with yoghurt and pomegranate seeds and folded into quarters.
